A nice change of pace to mashed potates and a lot less calories!! A nice change of pace to mashed potates and a lot less calories!!
Number of Servings: 2


    1 medium head of cauliflower, broken into pieces
    2 medium sized carrots, cut into pieces
    1/4 cup FF yogurt
    1 chicken bullion cube
    hot sauce


1. Boil the cauliflower and carrots in a pot with the bullion cube.
2. Cook until soft.
3. Puree in food processor or blender until the consistency you desire; add the yogurt to help blend and add additional creaminess
4. Add spices (salt, pepper, paprika, cumin, herb de provence, etc. Mix and match. make it different every time)
5. For a spicy kick, add some of your favorite hot sauce.

It can taste different every night if you use different spices. According to my husband, a real winner!!
