    1 lb pasta
    2 tb evoo
    2 garlic
    1 lb hot turkey sausage
    1 lb frozen peas, thawed
    1 c ricotta
    1/4 c parmesan


Boil pasta in water, omitting oil and salt. Drain, reserving 1 c water.

Heat olive oil over medium-high and cook chopped garlic cloves until fragrant. Remove casings from sausage and add to pan, using a wooden spoon to break up.

After sausage has cooked, move to side of pan and add peas to empty side of pan. Smash peas with back of wooden spoon. When finished, mix with the sausage and add ricotta.

Mix pasta and sausage mixture in large bowl, adding 1/4 cup of pasta cooking water at a time to keep mixture moist. Toss with parmesan and serve.
