Introduction

Only 88 calories! They go great with a slice of whole grain toast and jam for a light and very filling breakfast. And they are sooo good, you have to try them! Only 88 calories! Ingredients

    4 eggs
    2 egg whites
    1.5 c fresh spinach, packed then chopped small
    1 oz cabot 75% reduced fat cheese, grated
    1 T kraft parmesan cheese
    2 T nonfat milk
    3 T hormel bacon bits (50% less fat than panfried)
    salt and pepper to taste

Directions

Mix all ingredients together with fork in medium bowl. Spray a muffin pan with nonstick spray and pour the mixture into 6 muffins. Bake at 400 for 15 minutes or til golden brown on top, or less time depending how you like your eggs. ENJOY!

    These are really good! I cooked mine for a little longer than I would like my eggs generally, but I was able to warm them in the microwave. Great to make ahead of time! - 2/23/09

    I mixed this up Christmas Eve and poured it into the muffin pan on Christmas morning. We enjoyed it with a slice of whole wheat toast and a cup of coffee. A wonderful alternative to the traditional strata. - 12/25/08
