Ingredients

1 lb skinless, boneless chicken breasts, cut into cubes
2 T olive oil
2 t minced fresh rosemary
1 can (14.5 ox) Del Monte Petite Cut diced tomatoes with garlic and olive oil, drained
1 jar artichole hearts
1/4 c ripe olives
1 c College Inn White Wine and Herb Culinary Broth

cook chicken in oil in large skillet over medium-high heat, 3 min. Add rosemary; cook 2 min. Stir in tomatoes, artichoke hearts, olives and broth. Simmer 10 minutes or until chicken is no longer pink.
Serve over couscous or rice which can be prepared using the same broth in place of water.
