    12 oz salmon
    Grated zest and juice of 1 lemon
    2 TBS fresh dill chopped
    12 oz linguine
    1 1/2 cup carrots, cut into matchsticks
    1 1/2 cup zucchini, cut into matchsticks
    1 tsp olive oil
    7 TBS fat free sour cream
    Salt and black pepper to taste

    To Garnish:
    Fresh Dill
    1 lemon cut into wedges


1 Cut the salmon into chunks and place in a dish. Add the lemon zest and juice and the dill. Turn the chunks of salmon to coat them evenly. If time permits, cover and marinate in the refrigerator at least 10 minutes.

2 Cook the linguine as directed on packageor until al dente, 10 to 12 minutes. Add the carrots to the pasta after 8 minutes of cooking, then add the zucchini 1 minute later.

3 Meanwhile brush a nonstick or heavy-bottomed skillet with oil and heat over med-high heat. Drain the salmon, reserving marinade. Add the salmon to the skillet and cook 3 to 4 minutes, turning once until fish is cooked through.

4 Add reserved marinade; bring to a boil. Stir in sour cream. Remove from heat and stir in salt and pepper to taste.

5 Drain the pasta and vegetables, and transfer them to a serving dish or to individual plates. Add the salmon and marinade, garnish with fresh dill (optional). Serve with lemon wedges.
