    2 T butter
    2 T flour
    1/2 cup onion, chopped
    2 c Vegetable stock
    1 12oz can evaporated milk, nonfat
    2 medium potatoes, cubed
    1 c carrots, chopped
    1 c celery, chopped
    1 c broccoli
    1/2 c corn kernels
    1/2 c edamame, shelled
    2 cloves garlic, minced
    1 bay leaf
    1 tsp dried thyme leaves
    1 tsp salt


Saute the onions in the butter in a large pot until translucent.

Add the flour and stir. Cook for a couple of minutes.

Add the stock and evaporated milk.

Add the vegetables and seasonings

Stir while bringing to a boil. Then turn down to medium low and simmer for 30 minutes.

Makes 6 1-cup servings
