    3 large ripe bananas
    ¾ cup Splenda
    1/4c egg substitute
    1 tsp baking powder
    1 tsp baking soda
    ½ tsp salt
    1/2 cup almond meal
    1/4 cup wheat germ
    ¾ cup whole wheat flour
    1/2 cup plain instant oatmeal
    5 tablespoons Smart Balance, melted
    ¾ cup chopped pecans
    1-6 oz. cup plain greek yogurt (nonfat)
    1 tsp vanilla extract


Mash bananas. Add Splenda and egg. Add melted Smart Balance. Stir in yogurt, vanilla, and chopped pecans. Combine dry ingredients and add to wet.
Fill muffin cups 2/3 full. Bake at 375 for 15 min. Makes 20 pecan banana muffins.
