This salad can be made gluten free, vegan, or light. This salad can be made gluten free, vegan, or light.
Number of Servings: 12


    12 oz. pkg pasta of your choice (I like rainbow pasta)
    2 shallots, finely sliced
    .7 cup sweet pickle relish, or to taste
    1.5 cup mayo or veganaise, or to desired thickness


Cook pasta per package instructions, rinse with cool water. Combine all ingredients and mix well. Allow to chill in the refrigerator for at least 30 minutes (more time means more flavor!). This salad can be made gluten free (using a pasta like Mrs. Leeper's), vegan (using Veganaise), or light (using light mayo). The mayo and pickle relish are to taste, so you could add more or take away some, and the salad still works! My nutrition information includes veganaise.
