1 c. buttermilk can be used instead of the milk and juice. 1 c. buttermilk can be used instead of the milk and juice.

    1 egg
    1 c. minus 2 Tbsp. Milk
    2 Tbsp lemon or lime juice or vinegar
    1/4 c. unsweetened applesauce
    1/2 c. whole wheat flour
    1/2 c. buckwheat flour
    1 Tbsp. sugar
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt


Combine all ingredients in order given. If too thick, add 1-2 Tbsp. water.

Pour onto hot griddle. Turn as soon as pancakes are puffed and full of bubbles but before bubbles break. Bake until second side is golden brown.

Makes 10 4-inch pancakes
