    *Whole Wheat Tortilla, 1 serving
    Red Ripe Tomatoes, 1 cup cherry tomatoes (halved)
    Garlic, 2 cloves (diced or pressed)
    Spinach, frozen, 1 cup
    Mushrooms, fresh, .5 cup, pieces or slices
    Onions, raw, 0.5 cup pieces
    *Fat Free Mozzarella, 0.25 cup
    Salt, 1 dash
    Pepper, black, 1 dash
    Olive Oil, 1 1tsp


Distribute tsp of Olive oil and garlic onto Whole Wheat Tortilla. Bake at 400 degrees for 15 minutes (if you like a crispier crust, turn up the heat to 450).
While you arewaiting, thaw spinach and drain to remove most of the moisture.
Remove Tortilla from oven, turn oven down to 350. Distribute Spinach, tomatoes, onions and mushrooms evenly. Sprinkle cheese over veggies and return to oven at 350 for 15 minutes or until cheese is melted.
Remove and use a pizza cutter to cut into quarters.
