    1 2Lb Pumpkin
    1 tsp cooking oil
    2 tbsp butter or Smart Balance
    2 tbsp honey
    1/2 tsp ground allspice


Preheat over to 375F

Slice pumpkin in half and scrape out seeds and strings. Rub insides with cooking oil, then place face-down on a cookie sheet, then bake at 375F for 45 minutes. Let cool.

When cooled, scrape out cooked pumpkin and add to a saucepan and mash. Cook over low heat for 3 minutes to evaporate any excess moisture.

Stir in honey, butter and allspice.

Serve when well mixed.

  • We love the seeds! Finding this easy,low calorie, colorful and tasty side dish was perfect for everyone. There was a bit leftover. I just added another tablespoon of honey and reheated it for a snack later on. - 11/15/08
