Number of Servings: 4

Ingredients

    2/3 cup chopped apple
    1/2 cup chopped onion
    2 tbsp Butter
    3 cups cooked winter squash
    1 cup vegetable broth
    2 cups beef broth
    1 Tsp salt


Directions

Finely chop the apple and onion. Melt butter in a frying pan and add, stirring to coat with butter and soften about three minutes. Pour into slow cooker. Add squash, broths and salt. Cook on low 4-6 hours. Allow to cool slightly, blend to puree and serve warm.

    Good base--needed spices!Also, bring out the natural sugar in the squash by roasting first instead of cooking in butter. - 1/3/13

    It was OK, just not really all that exciting. It needs to have a bit more flavor. I did roast the squash first, as I love roasted squash. - 1/16/13
