Introduction

A nice sweet treat for those who are watching their fats and sugars. A nice sweet treat for those who are watching their fats and sugars.
Number of Servings: 9

Ingredients

    3 very ripe bananas, mashed
    1/2 c unsweetened applesauce
    2 large eggs
    1 t vanilla
    3/4 c quick oats
    3/4 c whole wheat pastry flour
    1/2 t cinnamon
    1/2 t nutmeg
    1 T baking powder
    1/4 t stevia extract
    1/3 c chocolate chips

Directions

Add wet ingredients and mix in order given.
Combine dry ingredients in a small bowl, making sure that the stevia powder is well distributed.
Stir dry ingredients into wet ingredients.
Do not overmix after addition of flour.

Pour batter in a greased 8x8 pan, or in 12 muffin cups. Bake at 350° for about 25-30 minutes, or until a toothpick comes out clean.

    Very Good
    I made this into 3 mini loaves. I think my bananas may have been too big because almost too moist. Will try with just 2 large bananas next time. Still good! I substituted 1/4 C sugar for the stevia. - 10/26/12
