    3 cups diced pears, peeled or not peeled
    1/3 cup lightly packed brown sugar
    1 Tbsp honey
    2 large eggs or egg white replacement equal to
    1/4 cup canola oil
    2 tsp vanilla extract
    1 1/4 cup oat flour
    1/2 cup regular oats
    1/4 cup coconut flour
    2 tsp baking soda
    2 tsp ground cinnamon
    1 tsp ground nutmeg
    1 tsp salt
    1 cup raisins


Combine the pears, sugar and honey. Allow to sit for a few minutes. Beat together the eggs through vanilla and add to pear mixture.

In a large mixing bowl, combine all the dry ingredients, except the raisins. Stir in the pear mixture, just until combined. Fold in the raisins.

Spoon batter into prepared muffin tins, filling cups full. Bake in preheat 400F oven for 20 minutes.

Makes 12 regular size muffins.

  • Looks yummy! you could possibly cut the amt of salt & baking soda in half. Other fruits, such as apple or pumpkin would probably be good in place of the pear. - 10/17/09
