    1 egg
    1 cup Smooth Peanut Butter, reduced fat
    1/4 cup apple sauce, unsweeted
    1/2 cup firmly packed brown sugar
    1 cup nonfat milk
    1 cup whole-wheat flour
    1 Tbsp. Baking Powder
    1/2 tsp. each baking soda and salt
    2 Tbsp. Strawberry Jam


PREHEAT oven to 400ºF. Beat egg, 1 cup peanut butter and the apple sauce in large bowl until well blended. Add sugar; mix well. Gradually add milk, mixing well after each addition; set aside. Mix flour, baking powder, baking soda and salt. Add to peanut butter mixture; stir just until moistened.

SPOON just enough batter into each of 12 muffin cups to cover bottom of cup. Spoon 1/2 tsp. of the jam over batter in cups. Cover evenly with remaining batter.

BAKE 15 min. or until lightly browned. Cool in pan 5 min. Remove to wire rack; cool completely.
