Introduction

rich and creamy mushroom soup rich and creamy mushroom soup
Number of Servings: 4

Ingredients

    5 cups mushroom (generous) use whatever you like; I used regular and portabella
    1/4 C onion
    garlic to taste
    1 1/2 - 2 C beef broth (I use low fat low sodium)
    1 C half & half (fat free can be used)
    3 Tbls. butter
    3 Tbls. flour
    1/4 tsp salt
    1/4 tsp pepper

Directions

Saute onion and garlic until onion is clear
add mushrooms and saute allowing flavors to blend

After mushrooms have broken down some add the beef broth. Allow this to cook until mushrooms are cooked to your liking. Transfer about half to blender and puree

In the skillet melt butter and add flour and cream, whish until well blended.

Add the mushrooms and pureed portion to the skillet and bring to a boil. Cook until thickened.

I have to add more salt and pepper, but I use too much of both on everything!

Nutritional facts account for full fat and sodium (that was what was available on SP..sorry) versions of every ingredient. Using the healthier options will bring these down significantly.
