    12 oz. cooked chicken breast, shredded
    .5 cup finely minced yellow onion
    .5 cup finely minced green pepper
    .5 Tb garlic powder
    .5 Tb oregano
    .5 Tb cumin
    .5 Tb black pepper
    dash salt
    8 corn tortillas
    8 oz. can of La Victoria Enchilada Sauce (or another brand)
    1 cup low-fat 2% shredded cheddar cheese


1. Preheat oven to 350 degrees.
2. Combine first eight ingredients through dash of salt. Set aside filling.
3. Warm corn tortillas in microwave on 50% power between two damp paper towels until pliable. Spray baking dish with non-stick cooking spray.
4. Divide chicken mixture into eight parts. Fill each tortilla, then roll. Place each rolled tortilla in baking dish with the seam side down.
5. Pour enchilada sauce evenly over the top. Cover with lid or foil, baking for 20 minutes.
6. Uncover enchiladas, sprinkling cheese evenly over the top. Put back in the oven uncovered for 5-10 minutes until cheese is bubbly.

I serve with vegetarian refried beans and non-fat sour cream.
