Ingredients

    Sauce part 1
    .25 cups pine nuts
    3 cloves garlic
    4 cups arugula
    .25 cups part skim ricotta
    .5 lemon yields lemon juice

    Sauce part 2
    1tbsp olive oil
    .25 white onion thinly sliced
    5 baby bella mushrooms thinly sliced
    1 medium tomato diced
    5 leaves basil cut into strips

    8oz barilla plus rotini

Directions

start water boiling

toast pine nuts over medium heat, remove
toast garlic cloves (in skin) 2-3 min on each side until browned. then peel
put arugula, garlic, pine nuts, ricotta, lemon juice in food processor. Salt to taste

add 1tbsp extra virgin olive oil to pan
add onions and cook until translucent
add mushrooms
cook until tender, remove

add pasta to boiling water cook according to directions

put diced tomatoes into hot pan cook until soft and add basil
add mushroom and onion mixture until combined remove

rinse out pan and cook the pesto mixture
drain pasta and add to pesto
add mushroom tomato mixture, heat through
