Number of Servings: 12


    2 1/2 cups trader joes whole grain baking and pancake mix
    2 bananas, diced
    1 cup low fat buttermilk
    1 egg
    3 tbs vegetable oil
    1 tsp cinnamon


Preheat oven to 350

Mix all ingredents in a bowl, except bananas.

Add in bananas

Spray muffin tins with baker's joy -or one of those wonderful convenient products for preparing baking tins without butter/flour

using an ice cream scoop (makes life easier) portion out the mix into the tins..

Bake til done -about 25 minutes.

Note: any baking mix will do in this recipe... bisquick would work as well...
