Introduction

Ingredients

1 Tsp butter
2 cups finely chopped onion
Cooking Spray
1 C Egg Substitute
1/4 C grated fresh Parmesan Cheese, divided
1/2 tsp salt
1/2 tsp pepper
2 large eggs, lightly beaten
1/4 C fat-free sour cream
48 (1-inch) pieces fresh chives
Directions
1. Preheat oven to 350 degrees.
2. Melt butter in a nonstick skillet over medum heat. Add onion to pan; cook 15 minutes or until golden brown, stirring occasionally.
3. Spread mixture in a single layer in an 11 x 7-inch baking dish coated wiht cooking spray.
4. Combine egg substitute, 2 tbs cheese, salt, pepper and 2 large eggs. Pour egg mixture evenly over onion; sprinkle wiht remaining 2 tbs cheese.
5. Bake at 350 degrees for 20 minutes or until set. Cool slightly; cut into 24 pieces. Top each with 1/2 tsp sour cream and 2 chive pieces.
Yields 12 servings (serving = 2 pieces)
