Ingredients

    4 oz. fresh spinach
    3 mushrooms, vertically sliced
    2 hard-cooked eggs, sliced - no yolks
    2 slices turkey bacon, cooked, drained & crumbled
    1 T. olive oil
    1 T. catsup
    1 T. cider vinegar
    1 tsp. Worcestershire sauce
    2 tsp. sugar
    1 T. onion, grated

Directions

Wash spinach thoroughly and pull off stems. Dry leaves well on paper towels and tear into bite-sized pieces.! Arrange in a bowl with mushrooms, warm eggs and bacon. Combine remaining ingredients in a skillet and heat to a simmer. Pour hot dressing over salad and toss gently. Serve at once. Serves 2.
