Introduction

Ingredients

    14 oz pkg spicy sausage
    1 whole onion, chopped
    3 potatoes, with skin, cubed
    1 quart chicken or other stock
    2 quarts water
    12 oz fresh kale, chopped (I used 169g)
    1 T dry onion soup base
    2 chicken bouillon cubes
    salt and pepper to taste

Directions

Spray soup pot with oil spray. Saute onions, sausage, until onions tender. Cube potatoes while onions are cooking. Add potatoes, add water, dry onion soup base, bouillon cubes, chicken broth. Simmer for about a half hour until potatoes are tender. While simmering, coursely chop the kale. When potatoes are tender, add kale, salt and pepper to taste, cook another 5-10 minutes until kale softens. Makes approx 12 cups soup.
