Hearty and filling soup, perfect for warming yourself up after a chilly day. Hearty and filling soup, perfect for warming yourself up after a chilly day.
Number of Servings: 6


    2 Cups black beans, cleaned, rinsed and soaked
    6 Cups cold water
    2 Cups vegetable broth
    3 medium onions, chopped
    1/4 Cup butter
    2 whole bay leaves
    3 cloves garlic, crushed
    1/2 tsp cayenne pepper
    1 Tbsp ground cumin
    2 Tbsp tomato paste
    2 Tbsp dried parsley
    2/3 Cup dry sherry


1. Place cleaned, rinsed beans in dutch oven and follow soaking directions.
2. Drain water off and refill wth 6 cups water and 2 cups vegetable broth. Cook over low heat until beans are soft, about 1 hour.
3. While beans are cooking, saute garlic, onions and parsley in butter. Add to cooking beans.
4. Add remaining ingredients, except sherry, to the beans and continue simmering for approximately three more hours. Add a small amount of water if beans become too thick.
5. About 15 minutes before serving, remove bay leaves and add sherry. Stir and enjoy!

Note: This soup is perfect on its own, but for added appeal you may garnish the soup with raw diced onion, finely diced tomato, and a small dollop of fat-free sour cream if desired.
