Ingredients

3 large potatoes, peeled and diced to 1/2 inch
1/2 cup clarified butter (ghee)
2 large onions, diced
1 TBSP chopped garlic
1 TBSP grated ginger
2 1/2 TBSP ground cumin
1 tsp turmeric
1/2 TBSP ground coriander
1/2 TBSP crushed red pepper
3 tomatoes, seeded and diced
3 cups chicken stock
1 TBSP salt
2 cups peas, thawed
2 TBSP brown sugar
1/4 c fresh squeezed lime juice
1 bunch cilantro, chopped
Directions
1. rinse potatoes to remove excess starch
2. heat 1/4 c butter and brown onions over medium heat
3. at same time, heat 1/4 c butter and fry potatoes to golden brown
4. combine onions and potatoes. add garlic and ginger and cook 2 minutes
5. remove from heat and stir in spices.
6. stir in tomatoes, stock, and salt. return to medium heat
7. simmer, uncovered, 15 minutes (until potatoes are soft)
8. add remaining ingredients and cook until peas are heated through. Adjust seasonings and serve immediately
