    APPCOT stands for Arbis (chickpeas), Palm, Pepper, Corn, Olives, and uhm..I forget what T is for..
    For the salad I use:
    1 red pepper
    1 yellow pepper
    1 can of hearts of palm sliced
    1 can of baby corn spears slices
    2 handfuls of olives (green or black)
    1 can of chick peas

    If I'm missing hearts of palm I replace with either artichoke bottoms (canned) or avocado.

    Dress with bottled italian dressing.
