This cake is made like Boston Creme Pie but with pinapple, pecans, and rum. This cake is made like Boston Creme Pie but with pinapple, pecans, and rum.
Number of Servings: 12


    1 pkg white or yellow cake mix
    3 egg whites
    1 can (2.25 cups) crushed pineapple, divided
    2/3 cup water
    1 pkg sugar free fat free instant pudding mix (vanilla or lemon)
    1 1/2 cups skim milk
    1 cup pecans, chopped, divided
    3/4 cup sugar or sugar substitute
    1 TBS cornstarch
    rum or rum extract


Combine cake mix, egg whites, half of the pineapple, and 2/3 cup water. Beat at low speed just until moistened, then at medium speed for about 2 minutes.

Prepare cake pans by spraying with non-stick spray and flouring very lightly. Pour batter into pans and bake at 350 degrees for 30-35 minutes or until toothpick comes out clean. Cool completely.

Beat together instant pudding mix and milk for about 1 minute. Chill for about 1 hour and then fold in rest of pineapple and 1/2 cup pecans. Spread pudding on top of one cake layer and top with the other cake layer.

Combine sugar or sugar substitute and corn starch in blender or processor and process on grind setting until the consistancy of powdered sugar. Add rum or extract and water to make a thin glaze consistancy. Spread glaze over top layer of cake and sprinkle with remaining pecans.
