Introduction

Delightful chicken veggetable soup, with or without chinese noodles. Delightful chicken veggetable soup, with or without chinese noodles.
Number of Servings: 6

Ingredients

    one medium head of bok choi
    one onion
    1 cup chinese pea pods
    one small crooked neck squash
    1 cup of button mushrooms
    1 cup of bean sprouts
    1 cup of zuchini (opptional)
    two chicken breasts
    1 package of fresh chinese noodles
    2 to 3 cloves of garlic
    2 to 3 sheets of dried seaweed
    1 T of apricot oil, (any oil will do)
    water to cover

Directions

I chop the chicken and satee' it with the garlic and oil. Then I add the chopped bok choi, onion, and squash. When that cooks down, I add the mushrooms and water. after the soup has simmered for an hour I taste to make sure it is salty enough, if not I add a little sea salt. Then the package of noodles go into the boiling water, last the bean sprouts.
When the noodles are soft, the soup is done.
I freeze half of it and eat the rest.
We like it with a loaf of italian bread.
Its a very good comfort soup.
