This is a slight twist on the Fresh Apple cake. This is a slight twist on the Fresh Apple cake.
Number of Servings: 24


    2 cups all purpose flour
    1 cup whole wheat flour
    1 cup white sugar
    1/2 cup sugar in the raw (or brown sugar)
    1 tsp baking soda
    1 tsp salt
    2 tsp cinnamon
    1 tsp nutmeg
    1 cup cooking oil
    3 med eggs or 2 large, well beaten
    2 tsp vanilla
    3 cups diced apples
    2 well ripened mashed bananas


Preheat oven to 350 degrees. Spray muffin pan with cooking spray.

In a large bowl, whisk together flours, sugars, baking soda, salt, cinnamon, and nutmeg.

In another bowl, mix together oil, eggs, vanilla, apples, and bananas.

Pour wet ingredients into dry ingredients. Mix well with a spoon.

Spoon into muffin tins. Bake until muffins are firm and an inserted toothpick comes out clean. Cool on a wire rack. Makes approximately 24 large muffins.
