    * 1 T Light Smart Balance Spread
    * 4 cloves garlic, finely chopped
    * 1 (10 ounce) package frozen chopped spinach, partially thawed
    * 1 (14 ounce) can artichoke hearts, drained and chopped
    * 1 (8 ounce) package fat free cream cheese, softened
    * 1 (16 ounce) container nonfat cottage cheese
    * 3 T grated Parmesan cheese


Melt Smart Balance in a large saucepan over medium heat. Meanwhile, blend (or food process) the cottage cheese until smooth and set aside. Saute garlic for 2 minutes. Stir in the spinach and artichoke hearts. Cook until spinach is fully thawed, about 5 minutes. Mix cream cheese and blended cottage cheese into the spinach mixture. Stir in Parmesan cheese. Cook, stirring occasionally, until heated through and flavors have mixed, about 10-15 minutes. Serve warm with fresh vegetables or crackers.

Makes 12 servings, approximately 1/2 cup.
