Introduction

I modified a different sparkpeople recipe I found to try and create a muffin that was high in protein and complex carbs. Perfect for a breakfast on the run! Ingredients

    1 Cup oats
    1 Cup Milk
    1 Cup whole wheat flour
    1 scoop Optimum Nutrition “Any Whey” protein powder
    ½ cup brown sugar
    ½ cup applesauce
    2 Eggs
    1 tsp. Baking Powder
    ½ tsp. Baking soda
    ½ tsp. Salt
    1tsp. Cinnamon
    ½ tsp. Nutmeg
    ½ cup raisins or dried cranberries
    ½ cup chopped almonds

Directions

First soak the oats in the milk for an hour. Meanwhile, preheated the oven to 400 degrees. In a separate bowl, combine all of the dry ingredients. When the oats are done soaking, add the eggs and applesauce. Finally, stir in the dry ingredients until mixed. Then divide into a well greased muffin pan. I used butter flavored canola oil spray. Bake for 20-25 minutes. Enjoy!
