Introduction

Ingredients

    soy protein isolate 90%, 1 cup
    Oat Bran, .5 cup
    *Whole Wheat Flour, 0.5 cup
    Wheat germ, crude, .25 cup
    Salt, .5 tsp
    Raisins, .5 cup, packed
    Cranberries, dried, sweetened (craisins), 0.5 cup
    Prunes, dried, .5 cup, pitted
    Dates, .5 cup, pitted, chopped
    Mori-Nu, Tofu, silken, soft, 325 grams (12 oz)
    Apple juice, unsweetened, .5 cup
    *Molasses, blackstrap, 1 tbsp
    Egg, fresh, 1 jumbo
    Sunflower Seed Butter, 1/3 cup
    Tahini, 1/3 cup

Directions

Line the bottom of a 13x9 glass baking dish with parchment paper and lightly coat paper with oil. Set aside. Preheat oven to 350 degrees.
In one large mixing bowl, combine protein powder, oat bran, wheat flour, wheat germ, and salt. Set aside.
Coarsely chop fruit and set aside in small bowl.
In another large mixing bowl, whisk the tofu until smooth. Then, one ingredient at a time, add (in this order is best) apple juice, molasses, egg, sunflower butter, tahini. Whisk after each addition until mixture is smooth again. Then, add protein powder mixture, about 1/3 at a time, mixing until thoroughly combined after each addition. When total mixture is completely combined, fold in the dried fruit until it is all evenly distributed.
Spread evenly in the prepared baking dish and bake 30-35 minutes. Remove from oven and let cool completely before cutting into squares. Store squares in an air-tight container for up to a week.
