    1 14.5 oz can Diced Tomatoes (Roasted Garlic)
    850 grams Cannellini Beans (Canned)
    20 cloves Garlic
    265 grams carrots (about 4)
    680 grams yellow onion (2 large)
    2 bay leaves
    1 cup water
    1 tsp salt
    1/4 tsp pepper
    1/2 cup parsley
    1 tbsp lemon juice


1. Break the garlic bulb into cloves and peel off skin. Chop one of the cloves but leave the others whole. If some cloves are very large, cut them in half lengthwise.
2. Spray a large, non-stick pan lightly with olive oil.
3. Add the onion and sauté until it turns a rich, medium-brown color (about 5 minutes).
4. Add the garlic and carrots and sauté for 1 more minute.
5. Add the beans, tomatoes, bay leaves, and water.
6. Cover the pot and simmer for about an hour, adding water if it gets too thick.
7. Stir in the salt and pepper.
a. If serving immediately, add all the parsley and lemon juice.
b. If serving later or at room temperature, add parley and lemon juice right before serving.
8. Serve over brown rice.
