Introduction

Use pumpkin or any squash. Use pumpkin or any squash.

Ingredients

    1 Cup Pumpkin, pureed or mashed
    1 Cup whole grain flour
    2 Tbsp brown sugar
    1 tsp cinnamon
    1 tsp baking powder
    1 large egg, beaten
    dash of salt
    1/4 Cup Liquid (kefir, buttermilk, milk any to your liking or consistency) [Recipe calculated w/kefir made w/1% milk]

Directions

Make as you usually would make pancakes, waiting for tops to bubble before turning.
Serve with butter and maple syrup (not figured in the calculation).

Note:To save on calories, I use whipped butter and pure maple syrup is healthier.

Serves 3 - 6 " pancakes.
