Introduction

Number of Servings: 4

Ingredients

    1 tbsp minced onion
    1 chili pepper, diced
    1 clove garlic
    3 tsp sugar
    1 tbsp fish sauce
    juice fro 1/2 fresh lime
    salt & pepper
    6 oz pork sliced thin
    3 c cooked spaghetti
    1 tbsp peanut or hot chili oil
    2 c bean sprouts
    1 c cole slaw mix
    3 mint leaves
    10 roasted peanuts, crushed

Directions

Mix onion, garlic, sugar, fish sauce, chili pepper, lime juice, salt and pepper in a baggie. Add por, and set aside for 10 -15 mins. Cook spaghetti, drain and run under cold water until cool to touch - set aside. heat oil in wok or large fry pan. Add pork and marinade, stir until cooked. Turn off heat, add veggies, stir to mix together. Add mint and pasta, mix. Serve with crushed peanuts. Optional: serve with nuoc cam sauce and/or cream of coconut or coconut milk. Will add more calories. Servings: 4.
