Number of Servings: 16


    3 pounds of yukon gold potaotes - diced
    1 large onion - diced
    3 leeks - sliced and rinsed
    1 bulb of garlic - roasted
    2 tbsp unsalted butter
    6 cups of chicken stock or broth
    1 1/2 cups of heavy cream
    8 ounces of diced ham
    2 cans of yellow sweet corn
    salt and pepper to taste


Makes approximately 16 servings (2 cups per serving)

slice leeks and rinse in cold water

dice onions

melt butter in sauce pan and add leeks and onions

cook until softened and transfer to crock pot or slow cooker

add diced potatoes, roasted garlic and chicken stock or broth to crockpot

cook on high for 4 hours

transfer to blender or use an immersion blender to blend soup until smooth

add cream and blend again

stir in ham, corn and salt and pepper to taste

serve warm or cold
