    1 medium eggplant (about 1 1/4 pounds)
    1 medium onion, chopped
    1/2 cup green peppers, chopped (optional)
    1 can (28 ounce size) Italian-style tomatoes, cut up
    1 can (6 oz. size) Italian-style tomato paste
    1 can (4 oz. size) sliced mushrooms, drained or 1/2 cup fresh mushrooms, sliced
    2 cloves garlic, minced
    1 teaspoon sugar (optional, to taste)
    1/4 cup dry red wine
    1/4 cup water
    1 1/2 teaspoon dried oregano, crushed
    2 tablespoons snipped fresh parsley, more if desired

    1/3 cup SOY Parmesan cheese, grated or shredded


Peel eggplant and cut into 1-inch cubes. (will salt and rinse these first, to remove bitterness).
Place eggplant, onion, green pepper, tomatoes, tomato paste, mushrooms, garlic, sugar, wine, water, and oregano. Cover and cook on LOW for 6-7 hours.

Stir in parsley.
Serve over whole wheat penne pasta.

OPTION: Stir in 1/2 cup kalamata olives.
