Introduction

A friend gave me this recipe and with a few modifications, my family loves this. It is fast and easy. A friend gave me this recipe and with a few modifications, my family loves this. It is fast and easy.
Number of Servings: 4

Ingredients

    1 pound lean ground turkey
    1 egg
    1 small apple, pealed and chopped
    1/2 an onion, chopped
    1/2 cup of oatmeal
    1 tsp dried rosemary
    2 tsp dijon mustard
    1 tsp salt
    dash pepper

    Topping: 1/4 cup ketchup and 1 TB splenda

Directions

Place the apple and onion in a chopper and chop fine, or you can shred them but the chopper works best. Mix this with the ground turkey in a large bowl. Put the oatmeal and rosemary in the chopper and whirl until the oatmeal is fine. Add this and the rest of the ingredients to the turkey and then divide evenly into 12 cup muffin tin.

Spread the topping on each muffin loaf, sprinkle with pepper and put in hot oven.

Bake at 425 for 20 minutes.

At the same time you can bake quartered potatoes that have been sprayed with cooking spray (or coated with olive oil) and sprinkled with salt and pepper. All will be done at the same time.

    I made this tonight! Very GOOD! Followed the recipe closely, except I used tomato sauce on top & chopped fresh sage, parsley, rosemary & thyme in with the onion & apple. I think next time I'll bake for 30 minutes at 400 (or 40 at 375), because they were a little moist for me - maybe too much apple. - 2/18/17
