Introduction

This french toast is super on it's own, but feel free to serve it with sugar-free maple syrup, sugar-free preserves, fresh berries, and/or a squirt of fat-free whipped cream!
If you would like to make this into french toast sticks, just cut the bread into strips before dipping it into the egg wash.

Ingredients

My Nutrition is higher than listed in Hungry Girl cookbook. The bread I listed is 50 calories per slice. If you do not go over 40 calorie per slice, the nutrition will be much lower.

3 slices light bread (40 to 45 calories each with about 2g fiber per slice)

1/2 cup fat-free liquid egg substitute

    1/2 tsp cinnamon, divided

    1/4 tsp vanilla extract

    1 no-calorie sweetner packet

Directions

Combine egg substitute with vanilla extract and half of the cinnamon (1/4 tsp). Use the egg mixture as an egg wash, and dip your bread into it.

Cook bread over medium heat in a pan sprayed with nonstick spray, flipping after a few minutes. Once both sides are brown, plate e'm, and sprinkle with sweetner and the remaining of 1/4 tsp of cinnamon.

  • Incredible!
Very yummy! I used 100% Whole Grain bread, b/c I didn't have light bread. I also put sliced bananas on top & folded them like a sandwich, so I didn't have to use syrup :) - 2/6/10
