    4 tsp. vegetable oil
    3/4 lb. red potatoes, peeled and diced
    1/2 c. green pepper, diced
    1/2 c. red pepper, diced
    1/2 c. yellow onion, diced
    1 tsp. curry powder
    1 garlic clove
    cayenne pepper, dash (optional)
    1 c. chicken stock
    3 c. or 12 oz bag frozen corn kernels
    2 c. low-fat or fat-free milk


Add oil to deep-sided skillet on medium heat. Add onion and peppers and sautee until softened, about 5 min. Add garlic and curry powder and cook until fragrant, 30 sec. Add chicken stock, potatoes, corn and cayenne pepper (if using) and simmer, covered, until vegetables are tender, about 15-20 min.

Add one cup of milk. Blend using hand-held immersion blender until desired consistency, or 1/3 to 1/2 of vegetable chunks are blended. Add other cup of milk just until heated through.

Makes about 4 servings, 1 c. each.
