A fluffly, savory quiche. A fluffly, savory quiche.
Number of Servings: 6


    18 oz mushrooms, sliced
    1/2 yellow onion, diced
    1/2 C flour
    1/2 tsp baking powder
    1/4 tsp salt & pepper
    8 oz Swiss cheese, grated
    2 eggs, large, whole
    1/2 C Egg Beaters
    1-1/3 C nonfat milk


Saute diced onion and mushroom until golden brown. In a bowl mix wet ingredients. Add dry ingredients. Add half of the cheese to the bowl. Pour ingredients into greased pie plate or baking dish. Top dish with remaining cheese. Bake for 25 minutes, until top is golden brown. Cool 10-15 minutes. (Prep time 30 minutes if you want to really get golden mushrooms and onions. Prep time of wet/dry ingredients only about 5 minutes.)
