This is a easy, filling, and nutritious meal that can simmer all day while you are at work! This is a easy, filling, and nutritious meal that can simmer all day while you are at work!

Ingredients

    4 Medium Potatoes (Yukon Gold),diced
    2 Medium Vidalia or Yellow Onions,diced
    1 cup ham, diced
    2 cans of chicken broth
    1 red pepper, diced
    1 cup of skim milk
    1 cup of ricotta cheese
    salt and pepper to taste

Directions

Prep all vegetables and add to slow cooker along with ham and chicken broth. Let all ingredients simmer for 7 hours on low setting, then add milk and ricotta cheese. Mix well and simmer for one more hour. Add salt and pepper to taste. This soup will be very thick and hearty-almost stew-like. For a thinner soup add more milk. This recipe makes 4-one and a half cup servings.
