Ingredients

Chicken -1 boneless, skinless breast
Sweet Potato - , one large peeled and cut in med thick discs.
Carrots - 2 fresh, peeled and sliced in thickish strips
Pam Cooking spray
Trader Joe's 21 Seasoning Salute (can be found at Trader Joe's - or season to taste)
Directions
Preheat oven to 350.
Slice carrots in strips and sweet potatoes in med-thick slices. Spray a large piece of foil with Pam. Layer sweet potatos, carrots and chicken, spray top lightly with Pam. Sprinkle with seasoning. Fold foil to make a packet. Place on cookie sheet and bake at 350 for 30-45 minutes.

I did a quick internet search for the seasoning, and found out it contains Black Pepper, Celery Seed, Cayenne Pepper, Parsley, Basil, Marjoram, Bay Leaf, Oregano, Thyme, Savory, Rosemary, Cumin, Mustard, Coriander, Garlic, Carrot, Orange Peel, Tomato Granules, Lemon Juice Powder, and Oil of Lemon - 11/22/08

I've made a recipe somewhat like this except without the chicken and added 1 white potato, 1 zucchini, a fresh, ripe tomato all topped with bread crumbs. Also drizzle small amount of olive oil between potato layers and carrot and zucchini layers. Bake w/o alum. foil. People at church love it. - 11/20/08

My husband and I made this the other night, and we loved it!! It is so easy, and the clean up is minimal. We didn't have the seasoning it called for so we created our own with the suggestion of another rating. The most time consuming part in preperation was peeling the potatoes. It was awesome!! - 3/2/09

I made these without the seasoning stated. Instead I sprinkled some powdered ranch seasoning. Next time my kids want me to try a different vege besides carrots. They aren't into cooked carrots. It would be good with asparagus. Not sure if the asparagus will overcook or not. Will make again. - 1/25/09

Finally, a recipe that the whole family liked - from my husband to my 3-yr old! I had to raise the heat to 400 after the initial 45 minutes and cook it an additional 15min. Otherwise I followed the original recipe. Everyone used a bit of salt according to their taste. This is so easy and delicious! - 11/25/08

Ok I tried this recipe and I followed it to the T , except the seasoning. I don't have a Trader Joes anywhere near me. I used a different seasoning. The chicken turned out fine, but the vegetables didn't cook at all. I cooked for another 10 mins and nothing. I was very disappointed with this one. - 11/12/08
