Introduction

Ingredients

    Scallions, raw, .25 cup, chopped
    Peppers, sweet, red, fresh, 1 medium, chopped
    Winter Squash (1/2 lb), 3 cup, cubed
    Edamame, shelled, fresh, 0.75 cup
    Yellow Sweet Corn, Frozen, 0.75 cup kernels
    Vegetable Broth, .25 cup, plus extra
    Salt & Pepper to taste
    oregano, .25 tsp

Directions

Oil spay a nonstick skillet and place over medium heat. Put a little broth in the pan to prevent sticking. Saute scallions and bell pepper until softened, about 5 minutes. Add squash, cover skillet reduce heat to low. Cook 10 minutes stirring occasionally. Add in remaining ingredients, season, and simmer 10 minutes or until liquid is absorbed.
