    1/2 cup chopped onion
    1/2 cup copped celery
    2 Tbsp oil
    1 cup pearl or pot barley
    2 1/2 cups water
    1 cup broth
    1 cup grated carrots
    salt & pepper to taste


1. In a pot, saute onion and celery in oil until soft, about 5 minutes.
2. Add barley, saute for another 10 minutes until barley is toasted.
3. Stir in the last ingredients.
4. Bring to boil, then reduce heat. Cover and let simmer for30 minutes or until liquid is absorbed.
Makes about 6 servings.
