Number of Servings: 8


    5 cans organic great northern beans, undrained
    1 can vegetable soup w/ beef broth (10.5 fl oz)
    2 cups diced extra lean ham
    1 green bell pepper, chopped
    1/2 Onion, chopped
    1 can green chili peppers, undrained (4 oz)
    1 tsp garlic powder
    1 tsp liquid smoke (optional)
    salt & pepper to taste


Spray large pot with olive oil cooking spray; add onions, peppers and ham; saute until onions are translucent. Drain one can of beans and empty to a small bowl; using a potato masher, mash these beans and add to ham mixture.

Add remaining cans of beans (undrained), can of chili peppers (undrained), can of soup, and one soup can of water.

Add spices, bring to boil and simmer for 30 minutes. IF your ham is not smoked ham, you might want to include some liquid smoke before simmering.

Great served with cornbread.
