    1 can chicken broth
    2 bonless skinless chicken breast
    1 sm can green chilies diced
    1 can chicken broth
    1/2 cup grated Montery Jack cheese
    1/2 cup grated cheddar cheese (if you use sharp or extra sharp you can cut this back to 1/3 cup.
    4 whole wheat tortillas
    4 tablespoons of sour cream (reduced fat)


cut up chicken and cook adding 1/2 green chilies set aside. warm up chicken broth and thicken with corn starch in water and add rest of green chillies to broth. mix montery jack cheese with chicken and chilies and put in tortillas and roll up and place seam side down in baking dish, pour sauce over enchiladas and sprinkle cheddar cheese over top. makes 4 enchiladas
