Ingredients

* 1/4 cup frozen shelled edamame
* 1/4 cup plus 2 tbsp frozen petite corn kernel
* 2 tbsp chopped red bell pepper
* 2 tbsp sliced green onion
* 1 tbsp finely chopped red onion
* 1/2 tsp dried parsley
* 1/8 teaspoon oregano or marjoram or basil
Dressing
* 1 tbsp fresh lemon juice
* 3/4 teaspoon Dijon mustard
* 3/4 teaspoon olive oil
* 1/8 teaspoon salt
* 1/8 teaspoon fresh ground black pepper
Directions
Prepare edamame according to package directions. Drain and rinse with cold water. Set aside to drain thoroughly.
Combine edamame, corn, red bell pepper, green onion, red onion, parsley, and oregano.
In a large bowl, whisk lemon juice, mustard, olive oil, salt and pepper. Add veggies to bowl and toss to coat. Refrigerate until ready to serve.
