These are a corn muffin. Delicious with an egg for breakfast. These are a corn muffin. Delicious with an egg for breakfast.
Number of Servings: 8


    * 1/2 cup All purpose flour
    * 1/2 cup Cornmeal, course yellow
    * Baking Powder, 1 tsp
    * Baking Soda, 1/2 tsp
    * Salt, 1/8 tsp
    * Buttermilk, lowfat, 1/2 cup
    * Egg, 1 large
    * 2% Cheddar 1/2 cup, shredded
    * 1/4 cup turkey bacon (about 4 strips)


Makes 8 muffins.

Preheat oven to 375 degrees.

Prepare turkey bacon according to package instructions.

Spray muffin tin with cooking spray.

In large mixing bowl, combine flour, cornmeal, egg, cheese, and bacon. The batter will be slightly lumpy.

Fill 8 muffin cups 2/3 full with batter.

Bake 20 minutes. Do not over cook or they will be very dry!!

Let cool for 15 minutes. Flip pan over to release muffins.
