I love these with Chili! I love these with Chili!
Number of Servings: 8


    * 1/2 cup All purpose flour
    * Cornmeal, 1/2 cup
    * Baking Powder, 1 tsp
    * Baking Soda, 1/2 tsp
    * Salt, 1/8 tsp
    * *Onion powder, 1.5 tsp
    * Lowfat Buttermilk, 1/2 cup
    * Egg, 1 large
    * Jalapeño Peppers, 2 pepper diced
    * 2% Cheddar 1/2 cup, shredded


Makes 8 Muffins

Preheat oven to 400 degrees. Spray muffin tin with cooking spray.

In a large mixing bowl, combine flour, cornmeal, baking powder, baking soda, salt and onion powder. Mix well.

In a medium mixing bowl, whisk together buttermilk, egg, jalapeño, and cheddar.

Combine wet and dry mixtures. (The batter will be slightly lumpy.

Fill 8 muffin cups 2/3 full with batter. Bake for 20 minutes. Do not over cook or these will be very dry!!

Let cool for 15 minutes.
