Introduction

Quick & Easy.. very healthy! Quick & Easy.. very healthy!
Number of Servings: 1

Ingredients

    2 cups - Rice (any kind)
    1/4 cup - Red & Green Onion
    1/4 cup - Bell Pepper
    2 Tbs - Olive Oil
    2 cloves - Garlic
    5 leaves - Basil
    3 Tbs - Soy Sauce
    1/4 block - Firm Tofu
    1/4 cup - Vegetable Broth

Directions

Cook rice ahead of time in rice cooker or stove top (i use rice cooker, because I can never get it right on the stove!)

Let 2 Tbs Olive Oil simmer in a frying pan. Start adding all the vegetable ingredients & crumble tofu. Let fry until crispy. Add vegetable broth and cook down.

Add rice and let fry (add more oil if it starts sticking. Stir in soy sauce and keep stirring until it's completely coated.

Serves 2 - 3, depending on if it's a main dish or side dish.
